Inquiring minds want to know: without graham crackers!, what do the French use as a crust for cheesecake?!?

Hi! Well, I'm not an expert in des gâteaux français, but what I have seen is for example, a gâteau de fromage blanc (cheesecake) with zero crust. No crust at all. I just saw that today at the market in Fontainebleau. For tarts and such, they generally use pâte brisée, which is the French version of a more traditional pie crust (as in, the kind you roll out or buy pre-made in the supermarket). I personally have also used Speculoos (another spicy, crumbly biscuit available here) as a substitute (I also used them for a 'smores party), and they're good, but I couldn't say that it's "French." Nice to read the recipe and I have to ask: Where do you find graham crackers? Nothing like that in our neck of the woods …

Thank you and for the Graham Crackers, I know! The closest I’ve ever gotten in France are Spéculoos, which are great. I ask friends and family who are traveling to pick up a box of GCs for me in the States and I horde them until I need them 😂 Thank heavens my sister-in-law is a flight attendant. But also I’ve never tried on Amazon France—have you ?

No, never looked for them in Amazon. They’re a favourite of my wife who also once brought some back from a trip to the US. Lucky to have a flight attendant in the family!
